Starward Whisky

Starward Whisky is an Australian craft distillery based in Melbourne, Victoria, founded in 2007 by David Vitale. The distillery specializes in innovative single malt and grain whiskies, maturing them exclusively in local red wine and fortified wine barrels. This unique approach, combined with Melbourne's variable climate, creates a distinctly Australian flavor profile. Originally starting as a small project at Essendon Airport, Starward has grown significantly since moving to Port Melbourne in 2016. The distillery produces between 250,000 and 500,000 liters of pure alcohol annually, utilizing locally sourced ingredients such as Australian barley malt and barrels from nearby wineries. Starward's core range includes offerings like Two-Fold, Nova, and Solera, along with cask-finished expressions and barrel-aged cocktails. The distillery has received several awards, including Best Craft Distilled Whisky in 2016, and has expanded its market reach to the U.S., Europe, and beyond.
